菜 名： 竹笙咸菜螺片汤
主 料： 鲜活海螺、上汤、潮州咸菜、竹笙、姜片、芹菜、香菇。
做 法： 首先取出海螺肉，用斜刀切片备用。再将竹笙去头去尾切成段后，用开水浸泡。将潮州咸菜斜刀片切备用。然后将上汤加入姜片、芹菜、香菇、咸菜片等一起烧开，再将螺片投入汤中，稍为一煮，则可盛碗上菜。
特 点： 此道菜汤清味鲜，是潮州菜中觉常见的特色汤菜。
