国庆节佳肴精选:雪衣鱼条

原料:净鱼(鲤鱼或胖头鱼)肉100克, 6个鸡蛋的蛋清, 精面粉25克, 干淀粉50克, 粗盐、味精、胡椒面、香油、葱、姜、料酒各适量, 花生油500克(耗100克).

制法:

(1)将鱼肉用水浸后切成5厘米长、1厘米见方的条, 放大碗里, 用葱、姜末、粗盐、味精、香油、料酒和胡椒面腌渍10分钟.

(2)将鸡蛋清打成泡沫状, 撒入精面粉、淀粉, 边撒边搅, 调成高丽糊(又称雪衣糊).

(3)将油倒入锅中, 烧至冒烟时离火, 待油凉至三成热时将满裹高丽糊的鱼条放入锅中(每次最多炸6条), 用文火将鱼条炸熟捞出即成.
