原料配方 鲜青椒2.5千克 盐500克 稀甜面酱2千克

制作方法

1.青椒下缸前,在缸内撒一些底盐,然后按一层青椒一层盐的办法装缸内。装满缸后,再洒少许盐水,以使盐能及时溶化而不致使盐留在缸底为度。青椒下缸后上压石头,每天早晚各翻缸一次。在翻缸七次后,改为每天翻缸一次,再过7天左右,即可捞出。

2.捞出腌好的青椒,用清水浸泡去咸,每次浸泡0.5个小时,间歇搅拌两次,直至沥去咸重盐卤后放入另一空缸,加入稀甜面酱漫头酱制(各地食用者因爱好口味不同,也有用配有各种香料的酱油浸渍,或在甜面酱中加豆瓣酱酱制)。在酱制过程中,要防止青椒浮起而酱不均匀,要用石头压紧压住,并且每天翻动一次,酱10~15天,青椒色泽青绿,表皮微皱透亮,即可食用。

产品特点 酱香浓郁,滋味鲜辣,咸度适口。
