菇肉桂花鱼
〖主料〗：桂花鱼2条（重12两，约480克），瘦肉2两（约80克），冬菇2-3朵
〖辅料〗：果皮1块，葱丝、糠、盐、胡椒粉、生粉各少许，生油2汤匙
〖调料/腌料〗：
腌料：生粉、麻油各少许，生抽1/2茶匙。
芡汁：上汤（或水）1/4杯,生抽1汤匙,老抽1/2汤匙，糖1茶匙，油2汤匙，麻油、胡椒粉各少许。
【制作过程】
(1) 浸软冬菇，去蒂洗净切丝，加入少许糖拌匀，留用。
(2) 瘦肉洗净，切丝，放入腌料拌匀；果皮浸软，切细丝。
(3) 桂鱼去鳞（当刂）肚，洗净抹干水，并在鱼身两面，斜划数刀，同时用少许盐、胡椒粉、生粉腌片刻，放在碟上，放上果皮，隔沸水用大火蒸七分钟取出，倒去碟内多余之水，保暖。
(4) 烧热二汤匙油，放入肉丝、冬菇用大火炒熟，淋入拌匀的芡汁，加入葱丝铲起，淋在鱼面即成。
