Taking the mature canes as samples, this study was conducted to establish a set of methods that were feasible in extraction, separation and purification of polyphenol from grapevine cane wastes.
本研究以葡萄成熟枝条为原料,采用超声波辅助有机溶剂提取法提取、大孔树脂柱层析法分离纯化其中的多酚类物质,建立了一套简单易行的葡萄枝条多酚类物质提取、分离纯化方法,并对56个葡萄品种枝条中的多酚类物质进行了测定。

[原料/调料]
花枝 100公克
芹菜(切小段) 2支
青椒(切小片) 1/2个
红萝蔔片 20公克
葡萄 12个
盐 1小匙
白胡椒粉 1/2小匙
葡萄酒 2大匙
橄榄油 1/2大匙
[制作流程]
(1)将花枝洗净沥干，在花枝上划上交叉花纹后切片，再用热水川烫，立即捞起放入水中待凉备用。
(2)再将芹菜、青椒、红萝蔔、葡萄等洗净一併切好备用，葡萄由尾部切十字刀法，不可切断，并去除籽备用。
(3)将橄榄油1/2大匙，放入锅中加热，依序放入芹菜爆香，续放入红萝蔔片、花枝片、青椒片、及盐、白胡椒粉略炒均匀，再放入葡萄粒、葡萄酒等拌炒数下，即可熄火盛起放入盘中即完成。
