原料配方 面粉500克 猪油150克 白糖200克
制作方法
1.把300克面粉倒在案板上，扒个坑，加50克猪油和150克温水和成水油酥，揉匀稍饧。
2.把余下200克面粉和100克猪油拌匀，拌成干油酥。
3.把干油酥包入水油酥内，用手稍按一下。用走锤擀成长方形，对叠两层，把缝留在中间擀开，如此反复三次。擀开至5毫米厚，然后用快刀切成每个6克的小菱形块。在菱形块中间顺长切一刀，不要切断。再把菱形块的四个边向菱形块中央各切三切，不要切深，然后把菱形块的一长角从中间刀口穿过，用手一拉两个角，即成生坯。
4.待油烧至六成热时，将生坯放入锅炸制，见酥浮起呈浅黄色即熟。用漏勺捞出，沥干油，码于盘内，撒上白糖即可。
产品特点 甜香，酥化。
