菜 名： 清汤红柳鱼
主 料： 鱼泥料8两（制鱼泥料，刀工要细，把鱼肉剁成酱，加适量盐水搓打成稠泥状，若搓打得法，其制成品肉质酥脆，增添风味）。
做 法： 1、用鱼泥料辗成平条状，二三寸阔，长短不拘，各从两边卷起大约二、三圈上，到中间相接为止，入笼蒸熟。
2、把鱼卷切块，用碗横排成花纹，填上肉片，下笼蒸炊。
3、起菜时扣上大碗，制好草菇列四周，灌好上汤，加味精。
特 点： 黑白相映，汤清味美。
