主料

光鸭1只(约750克)、红豉油15克、甘草1克、桂皮2克、猪油1000克(耗100克)。

配料

葱椒、生葱、生姜、芝麻油、味精、精盐、绍酒、淀粉各适量。

做法

1、将光鸭开背取出内脏洗干净、晾干,红豉油、湿淀粉拌匀涂在鸭皮上,放入油鼎炸至皮呈金黄色,取出放入钵里,加入红豉油、甘草、桂皮、绍酒、姜、葱、精盐和二汤一起炖约1小时。

2、将鸭拆去骨涂上湿淀粉、下油鼎炸至两面酥脆,取起原汁、味精、精盐,用淀粉水打芡,加入芝麻油,淋在鸭肉上即成。酱碟:芥末或香醋。

特点

皮脆肉嫩,味香爽口。
