主料： 海参（中个）4个。
配料： 香菇、虾米各0.5两，精肉酱4两。
做法： 1、把泡浸好海参用白酒下镬油炒，后用清水漂洗掉杂味，捞干。
2、海参腹内，镶入上述配料及盐，灌上好汤，红焖约40分钟，起菜时加味精和胡椒粉。
特点： 味道比海参汤浓郁，乃高级名菜。
