【原料】
桂鱼1尾(约重1000克),鸡蛋清250克,淀粉50克,火腿25克,香菇25克,黄瓜200克,葱、姜、蒜、笋尖、绍酒、精盐、味精各少许,高汤250克、精油500克(实耗100克)。
【制作过程】
将桂鱼去鳞去腮,挖去五脏,去骨去皮,将鱼肉剁成泥,用蛋清、高汤、淀粉、盐、味精拌匀成茸,把鱼茸抹成酒盅大的圆形片,用香菜、火腿制成百花形。油勺上火加温,用漏勺将鱼茸挤人油锅内,
