补充资料：江口豆腐干
豆腐干是江口县人民的传统食品之一，色香味别具一格，制作独特。其制作过程一般要经过泡豆、磨浆、滤浆、煮浆、点浆、上箱、过卤、切块、上扦、晾干等十道工序，才能做成产品，用棕叶每百穿成一串。江口豆腐干之所以有独特的风味，主要是采取了三条措施：一是选用纯净的井水；二是不揭豆油皮，以保留其精华；三是在上扦时，首先一小块的把它移放在类似斗笠的竹箪上，晾干八成左右，再晒干或烤干，使其不起泡，也没有糊锅巴，而形成干硬、发黄、透明的方块。
江口的豆腐干，吃法多样。可直接用来下酒，细嚼慢咽，香韧可口；用油炸酥，味似响皮而更加酥脆；如用水发胀切成细丝炒肉，则形似墨鱼丝而别有风味。因而多年来，豆腐干一直是江口人民喜爱和馈赠新友的上乘佳品。
