原料配方 酥粉98千克 糖衣料：饴糖12千克 白砂糖1.2千克
制作方法
1.制糖粉：将白芝麻仁，面粉分别炒熟呈金黄色，配以经过加工的砂糖粉混
合拌匀，放入石臼里擀成粉末，过70目铜筛即成。
2.煮糖衣：将饴糖、白砂糖熬至约135℃，滴几滴糖浆于冷水中视糖滴稍脆时即可。
3.夹粉：将酥粉炒至约35℃左右，倒在操作台一角稍压实。取少量酥粉均匀撒在操作台
上，再将煮好的糖衣放上，在糖衣表面撒些酥粉，擀成方型薄片，再铺上部分热酥粉，对折
擀薄，再铺上部分热酥粉，再对折擀薄，反复五次，直至糖衣较薄，夹粉均匀为止。
4.成型：夹粉完成后，立即将糖坯捏成长条，用三块木板条夹压成方型长条，撤去木板
条，用铜刀左右夹住，再另用糖刀切成片块，切后用木板条夹实，按次序逐片用刀拨离，即
可进行成品包装。
质量标准 规格：每千克40块，大小厚薄较一致。
形态：长方形片，完整，糖衣、酥粉基本均匀。
色泽：棕黄色。
组织：质地紧密，不松散，无杂质。
口味：具有浓厚芝麻香味，酥松，不粘牙，无骨子，无异味。
