本文基于对中国猪肉市场现状的分析,确立了构建中国猪肉绿色供应链这一研究课题;通过对国内外相关研究成果的综合分析,结合国内实际,给出了中国猪肉绿色供应链的特征及其设计原则,并运用IDEF建模分析和设计方法构建了中国猪肉绿色供应链;把绿色生产和绿色猪肉的思想与供应链运作模型相结合,构建了中国猪肉绿色供应链的运作模型,并对模型的六个流程环节:绿色计划、绿色采购、绿色饲养、绿色屠宰加工、绿色配送和绿色回收进行了详细的分析;研究了构建猪肉绿色供应链绿色度评价指标体系的设计原则,通过对影响整个供应链绿色水平因素的分析,构建了中国猪肉绿色供应链绿色度评价指标体系以及Fuzzy—AHP—Grey评价模型;最后,以中国一家大型食品集团为对象进行了实证分析,验证了构建的中国猪肉绿色供应链及其绿色度评价指标体系和评价模型的可行性。
