性质:是一种类胡萝卜素。板状或针状结晶。熔点189℃,紫外线吸峰534,499nm(二硫化碳中)。能溶于苯、氯仿、二硫化碳。在苯与90%甲醇水溶液间的分配试验中,完全属下层性。其乙醚溶液中加浓盐酸,呈深蓝色,但易褪色。本品投入含盐酸的氯仿中,即发生异构化变成辣椒色素(capsochrome)。将醋酸辣椒红酯用邻羧基过苯甲酸进行氧化制取。可用作调色剂。
