风板鸭法
每鸭一只，配盐三两，牙硝一钱。将鸭如法宰完，去腹内，用牙硝研末，先擦腹及各处有刀伤者，然后将盐炒热，遍擦就好。俟水滚透，放下鸡鸭一滚，不可太久。捞起，即下冷水拔之取起，下锅再滚再拔。如是三五次，试熟，即可取吃。不可煮顿致油走化，大减成色。
