    取自植物的具有香味、易挥发性的油状物质。又称香精油、芳香油。可直接作为香料,广泛用于轻工、食品、医药等工业制品,也可进一步分离成较纯的游离香料,如薄荷脑、桂醛等。精油取自芳香植物,已发现有63科347种,工业上有价值并已利用的有几十种,有的已人工栽培。提取精油可用芳香植物的花、蕾、叶、枝、果实、树皮、木材和根等部分或其分泌物,因植物种类而异。加工方法有压榨法、萃取法和水蒸气蒸馏法。精油的成分复杂,经单离可得多种有机化合物,主要成分为萜烯类,还含有芳烃类、醇类、醛类、酮类、醚类、酯类、酚类和其他化合物。原料不同,所得精油成分各异。
