潮州麒麟鱼
主 料： 鳜鱼1条（重约750克），芥蓝、火腿片、冬笋片、冬菇片各适量。
配 料： 盐、味精、油、湿淀粉各适量。
做 法： 1、将鳜鱼斩杀去骨，切成蝴蝶片，头用刀背拍扁。2、将鱼的头、脊骨、尾放入盘中定位，切好的蝴蝶片中央夹一片火腿、一片冬笋、一片冬菇，依次码在盘内，成麒麟形，加入盐和味精，蒸6分钟取出。将芥蓝入油锅翻炒，放在两旁伴边，用湿淀粉勾玻璃芡浇入即可。
特 点： 鲜美，嫩滑，有弹性。
