The hydrophobic black rice pigment was prepared by the water-soluble black rice pigment esterified by acetic anhydride through ultrasonic,the effects of water bath temperature,ultrasonic time and the feed liquid ratio of soluble black rice pigment to acetic anhydride on its esterification degree and color value were studied.
