性质:革兰氏阳性杆菌,(0.5~0.8)×(2.0~9)μm,两端呈圆形,单个或短链,不运动。在琼脂平板上菌落扁平且小、表面粗糙,在含有吐温80或油酸钠时可呈光滑,致密状,无色素产生。利用葡萄糖,半乳糖、麦芽糖、蔗糖、果糖、糊精,不利用牛奶、乳糖。同型发酵时利用葡萄糖产生的主要产物为乳酸。其细胞壁含有甘油磷壁质、肽聚糖属于L-赖氨酸D-门冬氨酸型。DNA的G+C含量为50.4%(mol)(浮力密度法)。该菌常可在高于41℃经发酵的土豆醪、蔬菜醪和谷物中找到。
