制备或来源:存在于甘蔗、甜菜及其他植物的果实、叶、根、茎及花中。以甘蔗为原料,将甘蔗切碎、压扎,将蔗汁用石灰处理,出去杂质,过滤,滤液真空浓缩,结晶,制得粗糖,溶解脱色,结晶而得。
备注:蔗糖的比旋光度+66.37°(水溶液)。本品由一分子葡萄糖和一分子果糖缩合失去一分子水而成。具有右旋光性。在蔗糖转化媒或弱酸作用下,本品水解为等摩尔的葡萄糖和果糖,随水解的进行,比旋光度下降,如果完全水解,则混合物水溶液的比旋光度就变为左旋,这是因为葡萄糖的比旋光度为+52.7°,而果糖的比旋光度为-92°,叠加后呈左旋性。
