原 料:

带鱼肉500克,牛奶150克,熟芝麻末20克,料酒、精盐、味精、胡椒粉、番茄酱、干淀粉、花生油、香油各适量。

做 法:

1、带鱼肉洗净,切成五厘米长、1.5厘米宽的小长块,用料酒、盐、胡椒粉调拌均匀,腌渍10分钟,再滚上干淀粉。

2、锅内放花生油,烧至七八成熟时,将鱼逐块下入锅中,炸至成金黄色时捞出,装盘。

3、锅内留底油烧热,加少许水,再加入牛奶、番茄酱,待汤汁烧开时,放入盐、味精、停火,用湿淀粉勾芡,再上旺火烧滚,用锅铲不断搅动,使汤汁不粘锅,淋入香油,撒上熟芝麻末,浇在鱼身上即成。

此菜由带鱼与补虚损、益肺胃、生津润肠的牛奶炸烧而成。带鱼有暖胃、补虚,泽肤的功效,主治产后身体虚弱等症。牛乳能补虚弱,止渴养心血。几物相配具有补虚损、益肠胃的功效。适于产后体弱者食用。
