性质: 在有机化学中通常指有机化合物分子中碳原子数目由于共价键断裂而减少的过程。随着碳原子数目减少,化合物分子量也降低,例如脱羧(RCOOH→RH+CO2)就是一种降解过程;在高分子化学中,通常指高分子聚合物在化学或物理因素、作用下聚合度降低的过程,从而引起一些诸如弹性、强度和黏性等性能的改变;在生物学中,常用微生物、酶等对大分子生物质,如蛋白质、多糖、脂质和诸多农副产品等进行均一或非均一的分解(或水解),也叫降解或生物分子降解。降解方式很多,如热降解、氧化降解和机械降解等。通常几种降解方式同时发生。聚合物降解会导致其性能改变,如力学性能下降、变色和发黏等。若降解反应发生在侧链上,这一类自由基彼此结合,就会产生交联结构,分子量变大,硬度增高。故降解在酿造工业、食品工业、环境保护、自然界物质循环中有着不可估量的作用和意义。
