果糖 fructose 一种单糖,分子式C5H12O5CO。全称D-阿拉伯型己酮糖,又称左旋糖。以游离的形式大量存在于水果的浆汁和蜂蜜中,是牛和人的精液中存在的唯一的还原糖。在菊芋(大丽菊的根)中D-果糖以聚糖的形式存在。大量的果糖与D-葡萄糖以苷键相互连接以蔗糖的形式存在。在水溶液中,呋喃型果糖和吡喃型果糖同时存在 。 果糖为棱柱状晶体 。 熔点 103 ~105℃(分解),相对密度1.60(20/4℃),比旋光度-132°→-92°。是所有糖中最甜的一种 ,比蔗糖约甜一倍。溶于水、乙醇和丙酮。果糖可以由菊芋水解得到,工业上大规模生产果糖是以蔗糖为原料,用稀酸或转化酶水解得到 。工业上也可用溴水选择性地氧化蔗糖水解液中的葡萄糖,然后除去D-葡萄糖酸得到果糖。果糖可用作食物、营养剂和防腐剂等。
