性质：某些旋光化合物溶液的旋光度逐渐改变，最后达到一个恒定值，这种自然改变旋光度的现象称为变旋光现象。例如α和β型两种葡萄糖异构体，新配制的溶液测得前者的旋光度是+113.4°，后者是+19.7°，放置后，旋光度都逐渐发生改变，前者降低，后者升高，最后都变成+52.2°。这是由于两者在水溶液中发生了可逆的异构化，直到互变达到动态平衡。
