主料
大鳝1条重1斤（约640克），烧腩4两（约160克），青葱2条，蒜头、绍菜各2两（约80克），姜丝、陈皮丝各少许。
配料
腌料：胡椒粉1/8茶匙，油、糖、盐各1/2茶匙，生粉1茶匙。
芡汁料：盐、糖、老抽各1/2茶匙，生粉1茶匙，清水3汤匙。
做法
1、烧腩斩件；蒜洗净切度；绍菜洗净切块。
2、鳝鱼用粗盐擦过，拖水洗净，抹干，斩成2厘米厚，用腌料拌匀，泡嫩油。
3、烧热油，蒜头炸至火黄色捞起。
4、烧热油3汤匙，下蒜头、绍菜、蒜度略炒匀，下鳝、陈皮丝，注入滚水慢火煲煮15分钟，下烧腩、姜丝和芡汁煮滚。
备注
鳝鱼拖水过程要迅速，并要立刻用水冲净，这样鳝肉不会破损。
