是高档筵席甜点。色泽黄、囱相映，悦日素雅，汤汁清澈，鸽蛋鲜嫩，金耳软糯，营养丰富，滋补佳品。 冰糖。来源于甘蔗的种植。我国甘蔗的记载见于《楚辞》。到了汉代岭南的蔗糖业已相当发达。东汉杨翠的《导物志》，应记载岭甫种植甘蔗很普遍，并能制成冰糖，当时称为“石蜜”。从此，石蜜逐渐成为调味，做点心和成药的重要原料。 原料： 主料：鸽蛋20个。 配料：金耳150克。 调料：冰糖200克。 制法： （1）鸽蛋入碗内，放入开水锅中永成荷包蛋，取出入碗。金耳入凉水中洗去泥沙，泡成膨胀，捞入筲筲内控去水分。 （2）炒锅上火，注入清水（l升），沸时下入冰糖溶化，跟着下金耳，煮约2分钟，打去浮沫，倒入鸽蛋煮1分钟即成。
