原 料：
熟鸡皮100克，熟猪肉皮100克，海蜇皮100克，熟火腿丝10克，水发木耳丝10克，熟青菜叶丝5克，姜末2克，醋2克，精盐3克，酱油5克，白糖2克，芝麻酱15克，麻油50克，花椒20粒。
制法: （1）将熟肉皮去除脂肪，批成约0.2厘米厚的片、切成5厘米长的细丝。熟鸡皮、海蜇皮也切成5厘米长的细丝，分三等份放在盘中，分别放上火腿、木耳、青菜叶丝。
（2）炒锅置中火上，加入麻油烧至六成热，下入花椒炸出香味后，捞出花椒不用，加入醋、酱油、白糖、精盐、姜末、味精烧沸，均匀地浇在三皮丝即成。
特点: 色彩鲜明，筋韧有弹性。
