原料: 原 料：
净冬笋400克，虾子5克，精盐6克，白糖2克，绍酒10克，味精1克，麻油10克，鸡汤100克。
制法: （1）将净冬笋洗洗，切成5厘米长、3厘米宽、1.5厘米厚的块，放冷水锅中焯火后，捞出沥干水分。
（2）炒锅上火烧热后，倒入鸡汤，放入冬笋块，烧开后改小火煨15分钟左右，倒入盛器内。
（3）将炒锅涮净，重新上火烧热后，倒入麻油，烧至六成热时，放入虾子，迅速翻炒几下，倒入盛有冬笋块的容器内。
（4）将精盐、白糖、绍酒、味精均放入盛有冬笋块的容器内拌匀，放凉后装盘即成。
特点: 色泽清雅，清淡味鲜，咸甜适度，味美可口。
