| 芹菜 Apium graveolens；celery 伞形科旱芹属二年生草本。又称旱芹、药芹。以叶柄作为蔬菜食用。原产地中海沿岸的沼泽地带。《齐民要术》有关于芹菜栽培技术的记载，所指多属水芹。直至李时珍著《本草纲目》，才有旱芹和水芹之分。中国南北各地广泛种植。
芹菜株高60～90厘米，侧根发达，多分布在土壤表层，叶着生在短缩茎上，叶柄基部有分生组织，能逐渐伸长。茎绿、浅绿或白色，少数品种并带有紫色。叶为二回羽状全裂叶，有光泽，也可食用。复伞形花序。芹菜按叶柄形态可分为细柄种(本芹)及宽柄种两类。芹菜为半耐寒性蔬菜，不喜高温。营养生长期不耐强光。喜湿润，耐旱力弱，在轻质肥沃土壤中生长良好。多行育苗移栽。但也有直播的。中国各地都在春、夏至秋季播种育苗。中国北方除在露地栽培外，还可在温室、阳畦和塑料薄膜棚中栽培。芹菜的常见病害有软腐病、斑枯病、斑点病；害虫有蚜虫等。芹菜含芳香油、蛋白质、无机盐和丰富的维生素。叶用芹含维生素C较多，根用芹的含量略少，矿物盐和纤维素较丰富。除作蔬菜外，中医学上有止血、益气、利尿、降血压等功能。果实中的芳香油经蒸馏提炼后可用作调合香精的原料。 |
