| 甘露糖 mannose 一种单糖。分子式C5H11O5CHO。为多种多糖的组成成分。以游离状态存在于某些植物果皮中，如柑橘皮中，桃、苹果等水果中有少量游离的甘露糖，象牙棕榈子、酵母、红藻、血清球蛋白、卵类粘蛋白和结核杆菌中含有D-甘露糖的聚糖。 甘露糖为白色晶体或结晶粉末，味甜带苦。  ＋29.3°（水）；β型的熔点 132℃（分解）， －17°→＋14.6°（水）。溶于水，微溶于乙醇。D-甘露糖与氯化钙容易形成结晶化合物C6H12O6·CaCl2·4H2O，并显示复杂的变旋光作用。D-甘露糖可被酵母发酵。
D-甘露糖可由富含D-甘露糖的聚糖（象牙棕榈子、酵母甘露聚糖等）水解制备。也可由D-甘露醇（海带制碘工业的副产品）在亚铁离子存在下，用过氧化氢氧化合成。也可由D-葡萄糖差向异构化，或由D-阿拉伯糖增长碳链等方法制备。 |
