原料:

豆腐(南)300克、猪肉(肥瘦)100克、青蒜50克。

调料:

大葱5克、大蒜5克、蒜蓉辣酱10克、植物油15克、盐3克、酱油5克、味精2克、白砂糖5克、胡椒粉1克、醋5克、辣椒油5克、淀粉(豌豆)5克、姜5克、各适量。

做法:

1、嫩豆腐切1厘米见方的丁,用开水焯过,控净水;

2、再放油中煸炒至微黄;

3、滑锅内放植物油烧热,加入葱姜蒜末煸香,再加入猪肉炒散;

4、加入蒜蓉辣酱炒;

5、加高汤、酱油、盐、糖、醋、味精和豆腐用中火烧入味;

6、撒胡椒粉,用水淀粉勾芡,淋辣椒油,撒蒜苗末即可。

特色:

山东菜,怪味,豆腐红亮滑嫩,味咸鲜香辣甜酸六味,故称六味豆腐。
