性质:一种天然食用黄色素。橘黄或橘红色油状浸膏。相对密度0.912。不溶于水。溶于乙醚、石油醚、丙酮。耐酸、碱及金属离子。不耐光。主要着色成分为玉米黄素(zeaxanthin)和隐黄素(cryptoxanthin,熔点169℃)。由禾本科植物玉蜀黍(玉米)黄粒种子中黄蛋白经正己烷提取、浓缩而成。也存在于多种植物及蛋黄中。用作人造奶油和糖果的着色剂。隐黄素作为一种维生素A元,效价为β-胡萝卜素的一半。
