为研究莱芜猪的优良肉质特性,本试验以生长速度快、肉质欠佳的杜洛克和大约克做对照,结果表明:莱芜猪肌肉嫩度、肌内脂肪含量、肌肉鲜味氨基酸、必需氨基酸、饱和脂肪酸和单不饱和脂肪酸显著高于杜洛克和大约克,而莱芜猪肌纤维直径和系水率则显著减少。

Inosinic acid and intramuscular fat content of longissimus muscles in Laiwu pigs,Yorkshire and Duroc were respectively determined with HPLC method and technical regulation for determination of pork quality(NY/T821-2004).
采用高效液相色谱技术测定了莱芜猪、大约克和杜洛克猪背最长肌肌苷酸含量,按照NY/T821-2004的方法测定肌内脂肪含量。

试验选用1日龄健康雏鸡,根据羽毛生长速度进行快慢羽分群饲养,研究羽速基因对莱芜黑鸡早期生长速度和蛋用性能的影响,结果表明,羽速基因对早期生长速度有一定的影响,初生重、2、4、7、10周末快羽系鸡体重显著高于慢羽,但对蛋用性能方面影响差异不显著。
