结果表明:以65%的乙醇作为浸提液,调pH值为2,80℃,提取率为80%;蔗糖、苯甲酸钠、维生素C的存在对荸荠皮棕色素几乎没有影响,而磷酸钠、亚硫酸钠的加入使色素颜色加深。

龙珠(鱿鱼嘴) 1/2杯
五榖米 1杯
水 1又1/10杯
盐 1又1/2小匙
米酒 2大匙
胡椒粉 1小匙
糖 1/2大匙
制作：
(1)荸荠洗净切片，厚度约为2公釐。
(2)将五榖米洗净，沥乾水分，加入水後浸泡4小时备用。
(3)将所有的材料、调味料一起放入五榖米中，略拌匀，放入电锅中煮熟。
(4)开关跳起後，先不要打开锅盖，让荸荠饭焖15分钟左右，打开後，将饭轻轻搅拌均匀即可食用。
