营养主食面包(也称大豆粉面包)
原料配方 标准粉40公斤 大豆粉10公斤 盐0.6公斤 鲜酵母500克 油脂750克
其工艺流程及制作方法与小麦粉主食面包相同。但大豆粉面包的营养成分高于小麦粉主食面包，可以补充小麦粉中赖氨酸的不足，在营养上起到互补作用，将大豆蛋白质作为面包的强化剂，面包中使用的强化剂有维生素、蛋白质、氨基酸和无机盐等。强化剂的用量，以100克面包计，可加入硫胺素0.3毫克，核黄素0.2毫米，赖氨酸100毫克，钙0.1毫克。同时，大豆蛋白质还有防止面包的老化作用。
