性质:凡葡萄糖发酵后产生乳酸、乙醇(或乙酸)和二氧化碳等多种产物的发酵称异型乳酸发酵,它是通过HMP途径进行的。此途径的关键酶是磷酸乙酮醇酶,它裂解5-磷酸木酮糖形成乙酰磷酸和5-磷酸甘油醛。异型乳酸发酵的菌种包括明串珠菌(Leuconostoc spp)和乳杆菌属(Lactobacillus)的某些种。明串珠菌产生D(-)乳酸,而短乳杆菌和食果糖乳杆菌产生DL-乳酸。
