油炸卤制花干是太原市的传统名特产品，采用独特的工艺，精细加工而成。
制作油炸卤制花干的原料要选用皮薄、油性大、颗粒饱满的上等黄豆，经去皮、浸泡、粉碎、过滤、煮浆等工序后，用卤水点浆，然后压成15厘米、再切成宽5厘米、长10厘米的干坯；在特制的模具内用手口薄刀将花千坯于正反两面交叉切花纹；然后下油锅炸至发涨漂起呈金黄色，捞出沥油，放在配制好的花料汤内卤制。经煮、焖、浸泡回软，捞出晾凉即成。成型后的花干造型美观，拉开呈鱼网状，放手合拢后似篱笆。制出的花干味道鲜美，是多种家常菜的配料，又可作为小菜单独食用，素以鲜、嫩、香、韧闻名。
