这是安顺居民,尤其是少男少女最宠嗜的小食。以荞麦磨浆,熬制后冷却成固体,切成小块,浇以腐乳,红油、蒜水、姜水、葱花、炸黄豆、脆花生用竹叉搅拌食用。其味香辣浓列,极富刺激。红油(油制辣椒)和腐乳质量最为重要。或用铜制漏匙拉成细丝,改腐乳为香醋,称“醋丝丝”味较清淡。荞凉粉多作舞后小吃
