To optimize the extraction technology of β-(1,3)-D-glucan from beer waste yeast with alkali-enzymatic method,orthogonal test was applied based on the single-factor experiments with dry yeast powder as raw material and extract rate of β-(1,3)-D-glucan,protein content and polysaccharid content were taken into account in this paper.
