| 脂质 lipids 生物体中一大类不溶于水而溶于有机溶剂的有机化合物。又称类脂。包括中性脂肪、磷脂、糖脂、鞘脂、类萜、类固醇、蜡等。不同脂质的化学成分和化学结构各异；有由碳、氢和氧组成的简单链状分子；也有具有多种成分的复杂的支链结构和环状结构。 根据其结构组成成分分为：①简单脂质。即脂肪酸与各种不同的醇类形成的酯。包括酰基甘油酯和蜡。②复合脂质。即含有其他化学基团的脂肪酸酯。包括磷脂、糖脂和其衍生物。③不皂化的脂质。即不含脂肪酸的脂质。包括类萜、类固醇等。除上述脂质外，还有脂蛋白和脂多糖等杂合分子。 脂质具有各种不同的生物功能。脂肪酸是生物体的重要能源，它以三酰甘油（脂肪）的形式贮存能量，也是许多结构脂质的构件。皮下脂肪具有防止机械损伤和防止体内热量散失的保护作用。磷脂、少量糖脂和胆固醇是生物膜的重要结构组分。糖脂作为细胞表面物质与细胞表面识别，种特异性和组织免疫有密切关系。另外有两类重要的不皂化脂质（不含结合的脂肪酸， 不能被碱所皂化，即水解的物质）：类萜和类固醇，它们分别具有激素、维生素、辅酶等多种生物功能。 |
