      醛糖的一级羟基氧化为羧基而成的羧酸。糖醛酸广泛存在于自然界,最常见的糖醛酸有D-葡萄糖醛酸、D-甘露糖醛酸、D-半乳糖醛酸、L-艾杜糖醛酸、 L-古罗糖醛酸:
   
  糖醛酸通常以吡喃糖和呋喃糖形式与它们相应的内酯处于平衡状态。它是动物、植物、微生物代谢的产物。 D-半乳糖醛酸是果胶的成分,果胶经酶促水解,可以得到很高收率的D-半乳糖醛酸。D-甘露糖醛酸和 L-古罗糖醛酸以结合的形式存在于多种海洋生物如海藻等中,因此也称藻酸。L-艾杜糖醛酸是硫酸软骨素、 肝素和其他多糖的成分。
  
  糖醛酸在剧烈的水解条件下,很容易发生脱羧反应,因此不易从天然资源中分离得到,一般采用酶水解制备。氨基己糖醛酸、2-氨基半乳糖醛酸、2-氨基甘露糖醛酸、 2-氨基葡萄糖醛酸也相继从细菌多糖抗原中发现。D-葡萄糖醛酸经醋酸杆菌作用得到戊糖醛酸(D-来苏糖醛酸)。
  
  糖醛酸通常以内酯的形式存在,D-葡萄糖醛酸是呋喃糖-3,6-内酯趋于稳定的状态,称为D-葡萄糖醛酸内酯。D-半乳糖醛酸的呋喃糖要求两个五元环之间是反式连接,因此,3,6-内酯采取吡喃糖型。
