:①原料:红薯250克,糯米粉250克,豆沙馅心250克,白砂糖100克,生油500克(实耗52.5克)。②制作方法:红薯洗净,蒸熟去皮,放入糯米粉中搓透揉匀成面团,再搓成长条,摘成26只剂子。将剂子揿扁;并成中间厚、四周较薄的圆形皮子,然后放豆沙馅心,包成球形,再略揿扁成金钱形的红薯饼。烧热锅(最好是平底锅),放适量油。将红薯饼逐只放入锅中贴煎至两面呈金黄色,出锅放入盆中。锅中加少量清水和 100克白砂糖,在温火上熬成糖稀直然后再放入煎好的红薯饼,使饼两面贴上糖稀,装盆即成。
