：①原料：红薯250克，糯米粉250克，豆沙馅心250克，白砂糖100克，生油500克（实耗52.5克）。②制作方法：红薯洗净，蒸熟去皮，放入糯米粉中搓透揉匀成面团，再搓成长条，摘成26只剂子。将剂子揿扁；并成中间厚、四周较薄的圆形皮子，然后放豆沙馅心，包成球形，再略揿扁成金钱形的红薯饼。烧热锅（最好是平底锅），放适量油。将红薯饼逐只放入锅中贴煎至两面呈金黄色，出锅放入盆中。锅中加少量清水和 100克白砂糖，在温火上熬成糖稀直然后再放入煎好的红薯饼，使饼两面贴上糖稀，装盆即成。
