主料： 干莲籽250克、鲜百合1个（大的）、鸡蛋2只、冰糖适量
做法： 1、以热水先煮莲籽约10分钟，然后趁水还热时，不断用手搓掉莲籽皮（水冷了便很难洗掉莲籽皮），跟着心水喉水冲洗，期间亦要不停搓洗至全部莲籽皮去掉，挖去莲心。
2、煲热水后下莲籽，盖上煲盖以中下火煮约1小时至烂。
注：1、若嫌洗莲籽费时，可买些已去皮的湘莲，也可以用鲜莲籽。
2、煮莲籽时切忌心急用大火，因莲籽容易煲烂。也不要用太小的火，会很费时。若用鲜莲籽，时间只须5分钟左右。
