The carcass traits and meat quality traits of 54 Tibetan pigs at 1,2 3,4,5,6,12 month old,respectively were measured to study the effect of the age on meat quality traits.
选择出生1月龄左右藏猪54头,分别在1、2、3、4、5、6、12月龄时进行胴体性能和肉质特性测定,结果表明:随着月龄的增加腹油、背膘厚、皮厚、眼肌面积呈上升趋势;屠宰率在1~6月龄之间变化不大,而在12月龄时增加较多;瘦肉率、前后腿比例、前腿、背腰、后腿中瘦肉率均随月龄增加呈下降趋势。
