性质:糖苷酶(glycosidase)的一种。能使橙皮苷水解成橙皮素-7-葡糖苷的酶。在未成熟的柑橘果实中存在橙皮苷物质,制成橘汁或糖水橘子罐头后,由于此种物质的存在,而产生白色沉淀,有损于产品质量。橙皮苷酶将橙皮苷水解为橙皮素-7-葡糖苷后,由于其溶解度高,便不再发生沉淀。常用橙皮苷酶的生产菌为黑曲霉等。主要用于消除橘汁和糖水橘子等罐头的白色混浊。
