Anser domestica;goose
    鸭科雁属大型水禽。鹅肉营养丰富,味道鲜美;鹅肥肝质地细嫩,风行国际食品市场;羽绒富弹性,结实耐磨,隔热吸水性能好,用于制作羽绒被服。中国鹅的饲养量居世界之首。按体型鹅可分为大、中、小3种。小型鹅产蛋量高,如山东玉龙鹅等年产蛋可达100~120个,而大型鹅仅产25~35个。按羽色可分为白色和灰褐色2种。前者足及喙橙黄色,体型较小;后者体型较大;鹅趾间有蹼,善游泳。喙扁平型,周边有缺刻,便于挖草根。嗉囊不发达,但肌胃压缩力大,盲肠也很发达。对青草、谷实的消化力强,适于放牧饲养。鹅的公母配种比例不高 ,自然配种大型鹅为1∶3~4,小型的太湖鹅为1∶6~7。人工授精繁殖时,受精率为80%~84%。孵化期30~31天。鹅品种间杂交和杂种优势利用取得良好效果。
