。大量存在于植物的种子、块茎等部位。淀粉以球状颗粒贮藏在植物中,是植物贮存营养物质的一种方式。天然淀粉由直链淀粉和支链淀粉组成 。玉米 、马铃薯淀粉分别含有 27%和20%的直链淀粉,其余为支链淀粉 ;糯米几乎全部是支链淀粉,其余为支链淀粉;糯米几乎全部是支链淀粉;有些豆类则全是直链淀粉。
    淀粉为白色粉末,无味无臭。直链淀粉又称可溶性淀粉,溶于热水呈胶体溶液,容易被人消化;直链淀粉的分子是由3800个以上的 D-葡萄吡喃粮糖单元以a ,1 →4键连接而成,具有线形结构 ; 直链淀粉与碘发生作用,生成深蓝色物质。支链淀粉是一种具有支链的多糖,不溶于热水;除有a,1→4键连接外,在分支点上的葡萄糖基不仅有 a,1→4糖苷连接,而且还有 a,6←1糖苷连接,分子量相当于145万葡萄吡喃糖单元;与碘反应呈蓝紫色。
    淀粉可由玉米、甘薯等含淀粉物质中提取。淀粉除直接食用外,还可用于发酵酿酒,制造酒精,水解制糖等。
