裙带菜梗
裙带菜梗因含水量大，组织较硬，味道不佳，色泽浓褐，并极易腐烂，所以大都废弃。
制作方法
在采收时将裙带菜梗切下，用盐水(或海水)洗净并切成适当的长度，浸入10%的盐水中，以抑制发酵作用(少量加工的场合可省略)，然后用每100公升的水加入碳酸钠140克、消石灰700克所配制的溶液，在70℃下浸烫数分钟后用水冷却，这样即可使裙带菜梗由浓褐色变为鲜绿色，抑制发酵作用。将浸烫后冷却的裙带菜梗拌入重量30%的食盐，即可保存一定的时间，并保持其鲜绿的色泽和硬度。
将盐渍裙梗加以脱盐，纵向切成细条，捆成适当大小的扎束，然后用氨基酸、调味料、麦芽糖等配制的调味液浸渍1～2天，取出后再用经85℃加热杀菌5分钟的豆酱浸渍3～7天，即得到硬度适当、齿感好、具有调味渍和豆酱风味的食品。在加工过程中，因无干燥、炖煮等工序，裙梗的水分损失较小，制品率高。
当裙梗很硬时，可适当提高调味液中酸的含量，或在豆酱中添加一些有机酸，使其软化。另外，生豆酱中因含有酵母，会使裙梗软化，故必须经加热杀菌后再浸渍裙梗。
