吉姆150克（干紫菜），白兰地酒15克，鸡脯肉150克，蘑菇50克，鸡汤1公斤，豌豆苗10克，精盐7.5克，味精5克，料酒15克，胡椒面3克，湿淀粉15克，鸡蛋清1个，熟芝麻15克，芝麻油5克
【制作过程】
1、将鸡脯肉洗净，剔净筋膜，切成6厘米长的细丝，豌豆苗摘尖，洗净，消毒 2、再将鸡丝用精盐、料酒、白兰地酒、胡椒面、鸡蛋清、湿淀粉搅拌均匀，浸渍好 3、干紫菜擦净，放在大碗中，先用少许开水泡一下，滗净水分，再用开水泡3分钟，撕成小片，待用 4、汤锅上火，放入清水，烧开后，放入鸡丝氽熟而不老，捞出，沥净水，放入汤盆中 5、汤锅上火，放入鸡汤，烧开后，撇去浮沫，放入精盐、味精、紫菜块和汤汁，烧开，倒入汤盆中，撒上豌豆苗和熟芝麻，再淋上芝麻油，即可
