绩溪菜糕
制法:先将糯米放在水中浸透,然后在乡间的水碓或石臼上捣碎,再用细细的铜细筛筛出,加工成米粉,晒干贮藏起来。食时将糯米粉盛放在木盆内,加入适量水和微量酒酿,然后搅拌成浆糊状,让其发酵,并保持一定的温度。 当糯米粉糊发酵成蜂窝状时,遂按甜、咸两种蒸糕味道配料。甜蒸糕在糯米粉糊内拌入若干白糖、小红枣及红绿丝即可;咸蒸糕则将事先炒熟的豇豆干丁、豆腐干丁和瘦猪肉丁拌入糯米糊中。配好料倒入蒸笼内,厚度均约一公分。 蒸糕时,将蒸笼一层一层地叠放在锅内,盖好锅盖后,温火先烧四五分钟,旋即转旺火烧十来分钟,等锅内蒸气上顶数分钟后,再用温火烧若干分钟。当锅内散发出特有的香味时,蒸糕便成了。
